Ingredients
- 450 g green asparagus, peeled and cut into 2 cm pieces
- 1 medium onion, diced
- 1 liter broth (chicken or vegetable)
- 1 scoop no-sugar-added whey protein, vanilla flavour (this flavour is very light and blends well with the rest of the ingredients)
- 20 cl single cream
- Salt and pepper to taste
Steps to follow
Step 1
Peel the asparagus and cut into 2 cm pieces.
Bring a large pot of water to the boil and add the asparagus. Cook in 400 ml of stock for around 15 minutes, until tender. Remove and drain.
Step 2
Dice the onion and sauté until golden.
In a shaker with a mixing bead, dilute 1 scoop of no-sugar-added whey protein in the remaining broth (be careful not to mix in broth that's too hot).
Place the onion, cream and asparagus in a food processor and blend until smooth.
Step 3
Mix the asparagus purée with the remaining protein broth in a saucepan over low heat.
Season with salt and pepper and mix well.
Step 4
Enjoy!
