Ingredients
- 3 ripe bananas
- 120 g melted butter
- 70 g chopped almonds
- 1 scoop vanilla whey with no added sugar
- 1 tablespoon cinnamon
- 50 g coconut flour
- 240 g flour
- A pinch of salt
- 100 ml yoghurt
- 2 tablespoons yeast
- 50 g liquid honey
- 2 eggs, beaten
Steps to follow
Step 1
Preheat the oven to 175°C and grease a loaf tin.
Mash the ripe bananas with a fork in a bowl and add the melted butter.
Step 2
Stir in the baking powder, cinnamon, chopped almonds and salt. Then stir in the honey, beaten eggs and yoghurt.
Add the flour, coconut flour and whey, and mix gently.
Step 3
Pour the batter into the prepared loaf pan and bake for about 50 minutes.
Allow to cool completely before serving.
