About the recipe
Healthy pumpkin and oat bran muffins made with protein powder and Greek yogurt to help you stay full! As well as being delicious, they contain no refined sugars and are gluten-free.

Per 60 g muffin
Ingredients
- 150 g oat bran
- 1 scoop vanilla whey (30 g)
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- a little ginger and cloves
- 250 g pumpkin purée (cooked squash)
- 100 g applesauce
- 100 g Greek yogurt
- 50 g maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- A few chocolate chips or pieces of dark chocolate
Steps to follow
Step 1
Preheat oven to 180°C. Grease a muffin tin.
In a medium bowl, whisk together oat bran, whey, cinnamon, ginger and cloves.
Step 2
In a large bowl, mix squash, applesauce, Greek yogurt, eggs, maple syrup and vanilla until smooth.
Stir in the chocolate chips and whey-oat mixture, then leave the dough to rest for two minutes to thicken a little.
Step 3
Divide the batter evenly between ten or so muffin tins and bake for around twenty minutes.
Transfer to a wire rack to cool for 10 minutes, then remove the muffins from the tin and place on the rack to cool completely.
Step 4
Serve warm with your favorite jam.
Nutritional advice
